The Maltese Cook: In Conversation with Chef Sam Farrugia
Chef Sam Farrugia is making waves in Gozo with ‘Ftajjar’, his innovative food joint that merges traditional Maltese flavours with a modern twist. With experience from kitchens around the world, he’s on a mission to showcase Malta’s culinary heritage.
Chef Sam Farrugia stands out in the bustling foodie scene on the Maltese Islands, especially in Gozo, where he has made significant strides in revitalising Maltese cuisine with his new Ftajjar outlet in Xlendi. His story tells the tale of bringing together local tradition with modern influences, creating original dining experiences that put Maltese cuisine heavily into the spotlight.
Sam’s career took flight when he left Malta at the age of 25 to broaden his horizons and acquire new techniques in kitchens around the world. His experiences varied greatly, from high-end establishments serving distinguished guests to smaller, community-focused settings. Each opportunity helped him appreciate his own humble roots, ultimately inspiring his return to Malta with a fresh perspective on his island’s cuisine.
Ftajjar, A Fresh Take on Maltese Tradition
One of Sam’s most recent projects is ‘Ftajjar‘, which began as a food van and has evolved into a lively outlet in Gozo. His vision for ‘Ftajjar’ is to create a space that embodies colour, quirkiness, experimentation, adventure, and, most importantly, fun. The centrepiece of the venue is a vibrant artistic display that reflects these values, showcasing local produce like the striking cactus plant with its prickly pears, alongside seasonal favourites such as aubergine and fig.
Sam invites guests to explore the assortment of local products featured on the menu, adding an interactive element to the experience.
While the menu at Ftajjar focuses on the traditional ftira, a beloved traditional bread, Sam reimagines this staple by incorporating various culinary influences, particularly Italian. By sourcing local ingredients like fresh cheeses, cured meats, and the famous Maltese sausage, he concocts a fusion dish that gives a nod to the past while pushing boundaries.
“It’s crusty on the outside and soft on the inside,” Sam explains. “We aim to innovate and find ways to enhance this comfort food with a mix of influences from our islands.”
Other Dining Ventures, The Maltese Cook and More
Beyond Ftajjar, Sam is also the creative force behind ‘The Maltese Cook‘, a venture that offers a range of dining experiences such as ‘Canapés and Cocktails’, with a focus on private events. His commitment to enhancing traditional Maltese dishes ensures that each creation resonates with both locals and visitors, providing a fresh perspective on familiar flavours.
Another noteworthy initiative is ‘Trust the Chef, Good Rustic Food, Bringing People Together’. This concept revolves around communal dining experiences where guests can enjoy rustic, homemade dishes designed to create a sense of connection and shared enjoyment. The focus on sharing food and stories makes each meal a communal event rather than just a dining experience.
A Growing Presence
Sam’s talent and dedication have not gone unnoticed, as he has begun to gain recognition in Malta and beyond. His passion for local ingredients and innovative cooking techniques resonates with those who appreciate good food and the culture behind it.
“Thank you to everyone who’s visited us at Ftajjar. Your support means we can continue this journey, and we truly appreciate it,” Sam says. His collaborations with local cafés, such as Karamelli Brunch Café in Rabat, further illustrate his commitment to transforming Maltese cuisine into an exciting adventure.
Looking Ahead
With a career fuelled by a love for local produce and a willingness to explore new territories, Chef Sam Farrugia is reshaping the dining landscape of Malta. His forward-thinking concepts bring together Maltese traditions and encourage everyone to try something new. Whether you are a local or a visitor to the islands, Sam’s dishes offer a unique opportunity to experience the best of Maltese cuisine in a lively and welcoming setting.
