Located within the historic grounds of Villa Bologna, Malta’s renowned 18th-century Baroque Palazzo, The Villa Bologna Restaurant continues to evolve while staying true to its roots. This season, the family-run trattoria introduces a new outdoor pizza oven, enhancing its already charming garden dining experience.
This Spring, The Villa Bologna Restaurant unveils its new outdoor pizza oven, adding a rustic touch to its beloved menu. Guests can now enjoy handcrafted Neapolitan pizzas al fresco, surrounded by the restaurant’s citrus-lined gardens. Led by pizzaiolo Emanuele Polodori who brings rich culinary heritage and a deep passion for pizza-making to Villa Bologna Restaurant, the menu remains dedicated to seasonality and tradition, using ingredients harvested directly from the grounds to create dishes inspired by Italian and Mediterranean flavours.
The new pizza menu draws inspiration from classic Italian pizzas, blending Italian roots with regional flair. Handmade in-house each day, the dough forms the base for a selection of thoughtfully crafted pizzas. Menu highlights include the Capricciosa, featuring a traditional Roman flavour profile, while the Romagnola showcases ingredients native to Emilia-Romagna, such as Parmigiano, Mortadella and Balsamic Vinegar. Another standout is the Diavola del Sud – a fiery Calabrian-style pizza that celebrates Southwest Italy’s love for spice, topped with N’duja and Calabrian salumi.
General Manager Eugenio, originally from Fiuggi near Rome, brings a wealth of fine dining experience to The Villa Bologna Restaurant. A graduate of ALMA School of Hospitality in Parma, his career spans top restaurants including Le Gavroche, The Fat Duck, Caractère, and Monica Galetti’s Mere. Now in Malta, he brings his expertise, Michelin background and warm hospitality to the team, embracing the Mediterranean lifestyle he’s always loved.
The Villa Bologna Restaurant offers more than just a dining experience – it’s a destination that celebrates history, nature, and exceptional cuisine. The new pizza menu will be available Wednesday to Sunday for dinner initially. The Villa Bologna Restaurant remains open for lunch and dinner seven days a week. The restaurant welcomes both locals and international visitors to experience its unique charm.
