A new speciality coffee concept has opened within the luxury setting of Corinthia Palace in Attard.

“At Josephine’s, guests will experience products on par with non-plant-centric foods,” explains Alexandra Pisani, Hotel Manager at the Corinthia Palace. “We want to offer our vegan and non-vegan guests an opportunity to sample coffees and treats prepared with Corinthia’s signature commitment to quality, which will also contribute to the wellbeing of the planet. This is something that is both different and will make a difference.”

The coffee shop has been shaped around a coffee brand that is new to Malta. As one of the UK’s leading speciality coffee roasters, Origin Coffee is an independently owned company that is Certified B Corp (a gold standard certification that measures a company’s social and environmental performance). Origin is bound by one central ethos: to source exceptional coffee from across the globe through a sustainable, triple bottom line approach. The B Corp certification is an important validation of who Origin is and what it does, and also validates Corinthia Palace’s choice in partnering with Origin for Josephine’s. From the scrupulous quality controls in sourcing the best coffee beans directly from farmers, through a preparation process that ensures the perfect extraction of coffee for each brew carried out by specially trained baristas, Origin offers an exciting coffee journey that ends with the perfect cup.

While the top-quality range of non-dairy milks complete the coffee selection at Josephine’s, the indulgent menu of carefully crafted sandwiches and bakes showcases the award-winning skills of the Corinthia chefs as they experiment with new creations, regularly changing flavours such as pistachio, citrus, orange blossom or coconut that will delight the senses. Other plant-based ingredients including dates, pulses, oats, barley and heritage grains with the use of dairy-free chocolate will all come together in the creation of a delectable choice of cakes, pastries and treats; while the sandwiches include mouth-watering fillings such as Lemon Verbena Pesto, Charred Aubergines & Black Sesame Hummus and Rose Harissa, Creamed Tofu, Pea Tartar & Asparagus.

Guests can now experience this new fusion of flavour, excellence, ethics and sustainability inside the intimate setting of Josephine’s or surrounded by the lush greenery of the garden oasis at Corinthia Palace.
