Recipe: Classic Gozitan Ftira
Gozitan Ftira is a much-loved traditional dish from the island of Gozo, celebrated for its rustic dough and generous Mediterranean toppings. This recipe is by Kareen Portelli, who prepared it on the TV programme Bongu Malta, sharing a homely and authentic take on this classic ftira. Simple, hearty, and full of flavour, it reflects the essence of Gozitan cooking.

Ingredients
The dough
- 500g 00 flour
- 2tsps dry yeast (6grams)
- 1.5 tsps sugar, 1tsp salt grinded
- 50ml extra virgin olive oil
- 300ml lukewarm water
The toppings
- Olive oil
- Onion
- Tomato
- Potato
- Anchovies
- Tuna
- Black Olives
- Green Olives
- Ground Pepper
Method
The dough
- Mix dry ingredients first, then slowly add oil and water.
- Form the dough and leave to rest for at least 2hrs.
- Open dough with fine semolina.
- Decorate it with your fresh toppings and flip the edges inwards.
- Brush the edges with olive oil to give them a nice crust.
- Bake in a preheated 250°c oven for around 25 minutes.
