Welcome to “A Pastizzi Experience”! What a treat to be invited into the home of our host, Michela in the heart of Sliema. Michela has created an in home immersion class offering how to make one of the oldest and most treasured traditional treats of Malta, the pastizzi. 

Classically filled with either ricotta or mushy peas, this flaky and scrumptious little treat can accommodate as a meal, a snack or a dessert! As you walk the streets of Malta, one can find pastizzerias on just about every corner. However, learning the art and the secret behind making such a unique item is something that only Michala seems to be offering. 

These items are usually kept in house to family trade secrets but with Michala’s background in tourism & culture and a history of being an English as a Foreign Language teacher (EFL) this was a natural progression for her to create. She is natural at teaching groups and can accommodate up to twelve people at one time. Book in advance though! She is not easy to get these days with a three month wait list!

What are some of the secrets I learned from Michala? For one, the dough of the pastizzi itself is made up of only three ingredients: flour, salt and water. I also learned that flour can be very temperamental so a 50/50 flour is her base of choice.

What is the medium used for the greasy texture of a pastizzi? That would be an entire block of margarine! Many years ago, lard was used.

What is a secret spice added to the mushy peas? Curry.

What is a secret spice to the ricotta? I learned it…but it’s offered in her classes as an extra secret that brings out the fresh cheesy cream flavour…you’ll have to sign up and find out for yourself!
