With summer a few days away, there’s nothing quite like al fresco dining. And what better place to sit and while away a few hours than the glorious outdoor terrace of the Radisson Blu Resort in St Julian’s, host to the beautiful Le Bistro?

With a fresh, updated menu, full of recipes and ingredients that are staple of warm, Mediterranean summers, you’ll want to sample and savour every one of them. As always, their chefs have outdone themselves to select unique combinations of flavours which complement each other, elevating the dining experience.

Without wanting to give away too much of their new, tantalising menu, they were keen to share a few of the more audacious items which they have in store, such as their Pickled Wild Mushrooms, accompanied by an aubergine caviar and radish salad; or the asparagus and pea soup, topped with ricotta salata; or even their Grilled Seabass, which comes with a side of yellow tomatoes, bok choy, spring onions and soy ginger. With a generous selection of fish, seafood and fresh cuts of meat, the new and updated menu also features several vegetarian dishes.

Not to mention the new, mouthwatering additions to the dessert menu, such as the Ricotta di Pecora cake, with pistachio ice cream, orange and berry gel. There is even a gluten free, flourless option – the Mini Tartufo, with white and dark chocolate mousse.

Le Bistro is open, daily; from Monday to Thursday between 6 and 10 pm; Friday and Saturday between 6 and 10.30 pm; and Sundays from noon till 3pm and from 6 till 10 pm.
